The challenge
A centrally located cookline gives chefs access from both sides, but it also puts heat and grease-laden air in the middle of the room where wall-mounted extraction cannot reach it. The hotel needed high cooking throughput without the kitchen becoming uncomfortably hot, and every surface had to withstand continuous commercial cleaning.

How the project was delivered
Kitchen flow, duct routing and clearances were assessed so the island could be positioned for two-sided working without blocking service paths.
Cookline, prep surfaces and canopy were designed as one assembly, with the canopy sized to overhang the cooking equipment on all sides.
Grade 304 stainless sheet was cut, folded and welded into the cookline base, work surfaces, prep tables and the canopy body with internal grease baffles.
The multi-burner range was fitted into the cookline structure and gas connections were made and checked.
The canopy was suspended over the island, connected into ducting and tied to the extraction fan run.
Extraction draw was checked across the canopy, surfaces were finished and cleaned, and the kitchen was handed over in working order.

What was delivered

- Registration. Confirm the fabricator is EBK-registered, especially where gas connections and ducted extraction are involved.
- Canopy sizing. Ask for the canopy overhang against the cooking equipment footprint — an island hood must exceed it on all sides.
- Material grade. Confirm grade 304 stainless for work surfaces and canopy, not a thinner substitute.
- Duct routing. Agree the duct route and fan position before fabrication, not after the canopy is built.
- Commissioning. Require an extraction check across the whole canopy at handover, not just a fan power-on.
